As we enter into a new year and a new decade, all of us at Consilience would like to especially thank you for your involvement in supporting Consilience wines. We understand that there are many choices in a growing wine world and we appreciate your recognition and enthusiasm for our style. We hope that these releases will add a little pleasure to your afternoon or give you a head start on the Valentine’s Day festivities. 2007 Roussanne, Santa Barbara County $22
With tongue firmly planted in cheek and our apologies to Sting – “Roooo-Sanne! You don’t have to turn into red wine!” It sounds odd, but in France, Roussanne is often blended with red wine. Sacré bleu! Here at Consilience, we think our elegant Roussanne shines on its own quite beautifully - showcasing intense aromatics of peach and white tea and flavors of Japanese pear, white nectarine and hints of honey. This white has character and elegance so naturally it pairs wonderfully with seafood (especially crab and halibut). You can also take a walk on the wild side and drink it with Chinese, Greek and Cajun food!

2006 Hampton Vineyard Syrah $36
With a career in vineyard management that spans nearly four decades, Dale Hampton knows a thing or two about how to grow top quality grapes. He brings all that experience to bear at his small, personal vineyard, located in the warm, eastern end of the Santa Ynez Valley. We feel pretty lucky to have access to this outstanding fruit – especially when we drink the wine our very own Brett Escalera made from it! True to the expressive, signature, Consilience style, this is a powerful, fruit-forward wine with flavors of blackberry, boysenberry, baking spices, white pepper and chocolate. The long and flavorful finish invites you back for more - but get it while you can because we only made 226 cases! Pair it with anything you can grill including beef, lamb or portabella mushrooms. It also plays well with chocolate in all forms - from truffles to molé sauce.

2006 Estelle Vineyard Syrah $32
The Estelle Vineyard is located east of Hwy. 154 in the “gateway” to the Happy Canyon area where grapevines are treated to long, warm sunny days combined with the cooling influence of the Pacific. The soil at Estelle is very rocky; this stresses the vines in a good way- so that they produce concentrated fruit. The wine made from these grapes is fruit-forward and intriguing. With just one sip, you’ll taste layers of jammy, dark berry fruit, all veiled with smoke and spice. With that combination of tastes, you might guess that this wine pairs beautifully with red meat– and you’d be right! Open some Estelle with a nice, juicy steak or hamburger – after all, as the old saying goes, “wine makes every meal an occasion, every table more elegant, every day more civilized”. I’ll drink to that!
